Hi-ya, Friendly Humans. Hurray that you joined us! My name is Penelope Chi. I’m the vegan minded, not so vegan Chihuahua and I’m a blogging doggie. My Mumsie and I are whipping up lots of plant based goodies for you! Have we got an easy, fast and gooey brownie treat for you! When you are feeling lethargic, lazy & slothful and all you want to do is live in your jammies forever, like my Mumsie, yet are still in the mood for an awesome brownie, the last thing you need is a recipe with 10 ingredients or more. Well, look no further because our brownies have only 3 ingredients. That’s right, you heard me correctly…3 ingredients! (Don’t worry, we have another fabulous brownie recipe coming up down the road a piece that will totally have Wayyyy more than 10 ingredients. It is so cool, so be sure to stay tuned, please and thank you.)
3 ingredients means ‘not a lot of work.’ Who needs work? Not this Chihuahua!
So, here are the 3 ingredients.
That’s it. Easy. Whip them up, bake and get right back to your sinful, slothful life of dallying and loafing, just like Mumsie. Then you can add gluttony to the list of sins as you eat all those brownies up in front of your doggie while she watches.
Not sharing is also a sin. It’s called greed.
That being said, we love Justin’s brand hazelnut spread, and when I say “we”, I mean “Mum”, because I never get any chocolate. Gigantic bummer.
Anywho, Justin’s is vegan, chocolatey and hazelnutty. Yum (not that I would know), Yummers! We also have a big crush on any and all of Bob’s Red Mill flowers and such. Mama Chia brand chia seeds rock because they have a sexy chick on the package, so that’s a winner.
First you are gonna want to grind up your chia seeds into a fine meal.
Then mix in your hot water and let sit for some minutes.
Stir in your chia seed mixture.
Fold in your flower until thoroughly combined.
Press the thick batter into your oiled baking dish with a rubber spatula or your clean hands.
Bake it for 35-40 minutes.
Ingredients
- 1 & 1/2 cups (16 ounces) vegan chocolate hazelnut spread (Mumsie & I use Justin’s)
- 1/2 cup almond flower or brown rice flower
- 2 Tablespoons ground chia seeds (measured after grinding)
How to make
- Preheat oven to 350 degrees.
- Lightly coat an 8×8 baking dish with coconut oil or baking spray.
- After grinding your chia seeds, measure 2 Tablespoons into a small mixing bowl
and mix with 6 Tablespoons of very hot water. (Water does not count as an
ingredient!) Let sit for 5 to 10 minutes. - Using a long tablespoon, empty the jar of chocolate hazelnut spread into a microwave safe mixing bowl.
- Microwave for 10 seconds, stir, then microwave for another 10 seconds. Do this about 4 or 5 times, until nice and creamy and easy to stir.
- Stir in the chia mixture.
- Adding a little flower at a time, continue to stir until thoroughly combined.
- Pour the batter into the prepared baking dish. (The batter will be quite thick.)
- Spread the batter evenly with a rubber spatula or your clean hands.
- Bake for 35-40 minutes.
- Allow to cool before cutting.
- Eat em up!
*makes 9 brownie sized brownies
Be mean and let your doggie smell the chocolatey goodness, but make sure you never, ever give her any, no matter how precious and cute she is.
Man, oh man! I never get any chocolate. I don’t even know what it tastes like. Mumsie, isn’t it a Superfood? Why should I be deprived of such a healthy food?
