Sweet, Hottie & Savory Roasted Nuts

Penny and Rosemary

Ingredients

  • 3 Tablespoons melted coconut oil
  • 2 cups whole, raw & unsalted cashews
  • 2 cups whole pecan halves
  • 2 cups whole brazil nuts
  • 1 & 1/2 cups whole almonds
  • 1/2 cup date syrup or maple syrup
  • 1/3 cup coconut sugar
  • 3 Tablespoons freshly squeezed orange juice
  • 3 Tablespoons finely minced fresh rosemary leaves, divided
  • 2 teaspoons ground chipotle powder, or More!
  • Himalayan pink salt, to taste
  • 1 Tablespoon chlorella powder, to finish (optional)

Directions

  1. Preheat oven to 350. (See notes*)
  2. Line a sheet pan or two with parchment paper.
  3. In a very large mixing bowl, combine the nuts, melted coconut oil, date paste, coconut sugar, orange juice, chipotle powder, 2 Tbsp of the minced, fresh rosemary & however much salt you want to use.
  4. Toss to coat all the nuts evenly.
  5. Spread the nuts in one layer.
  6. Roast all this goodness for 25 minutes, making sure to stir 3 times during with a large metal spatula.
  7. When nuts are golden brown (tehe! Mama said nuts like 10 times!), remove them from the oven and sprinkle with the remaining 1 Tablespoon of fresh rosemary and more salt if you think it is needed.
  8. Stir again!
  9. Now add the chlorella powder while still a little warm and stir again.
  10. Stir a few more times as they cool at room temperature. (See notes**)
  11. These can be enjoyed warm or stored in airtight containers, at room temperature. (See notes***)

Tips:

  • * It is always possible to change the temperature of your oven if you think my recommendation is not quite working for you. Mumsie, in fact, lowered her oven temp to 325 degrees mid-way roasting these nuts.
  • **I’m not going to lie to you…You are going to need to stir while cooling about 20 times, separating manually, no joke! But it’s worth it.
  • ***Hey! My Grandmumsie liked these (My Mumsie’s Mumsie!)…She is a serious meat eater! It’s kind of a compliment. I can’t help it. She said that they were tasty and kept eating them. She is super sensitive to spicy foods, yet could handle Mr. Chipotle. I just get a real kick out of that kind of thing.
